Here I am going to share the recipe of cucumber and papaya salad. Its bit tangy in taste. You can adjust the quantity of ingredients to make it sweet and sour as per your taste. The salad is quite healthy and tasty.

Ingredients:

Cucumber (chopped)
Raw papaya (grated)
Roasted and crushed peanuts (1/2 cup)
1/2 cup pomegranate seeds
Coriander leaves for garnishing


Dressing:

2 tsp lemon
1 tbsp tamarind pulp
1 1/2 tbsp brown sugar
12-15 mint leaves
Salt to taste
Few blackpepper corns
4-5 green chillies


Method:

Put all the ingredients for dressing in the grinder and make a paste. The consistency of the paste should be like any squash or syrups which we get in the market. Adjust the quantity of ingredients depending on how sour or sweet you want your salad to be.

Mix the cucumbers, grated papaya in a bowl. Add the dressing, crushed peanuts, pomegranate seeds and mix well. In the end, garnish it with coriander leaves.
